Fall is our favorite time of year in California. The weather cools down, the tourists go home, and persimmons start popping up at the farmer’s market. We long for its rich, sweet flesh and bright orange skin months in advance. But the persimmon is fickle and its growing season short, so we did what we do best; we made a shrub with all the persimmons we could find.

Local fuyu persimmons from La Vigne Organics provide a rich and meaty backbone for this seasonal winter shrub. We cut into that sweetness with some of our favorite ingredients from the East: organic ginger root, oolong tea, and black peppercorns.

It's full body and bright botanical structure make it a perfect match for spirits like gin, pisco, brandy, whiskey, and mezcal. Or simply splash it in a glass of your favorite amaro and top with club soda for a festive spritz.

HOW TO USE IT:
Cocktails: 1/2 oz shrub [or more, to taste]
Sodas: 1 oz shrub in 8oz soda water
