We love things that break the rules. And kumquats break the rules of a typical citrus fruit, with deliciously sweet peels and shockingly tart, astringent flesh. So when we heard our friends at La Vigne Organics had a killer crop of organic kumquats coming in for summer, we pulled the trigger.

This shrub starts out super tart, thanks to those kumquats, but is quickly tamed by the floral, earthy notes of fresh lemongrass and kaffir lime leaves.

We love pairing it with the brightest spirits: dry gin, tequila, mezcal, pisco, and white rum to name a few. It also makes our favorite salad dressing of the summer.

HOW TO USE IT:
Cocktails: 1/2 oz to 3/4 oz shrub
Sodas: 1 oz shrub with 6 oz soda water
Salads: 1 part shrub to 1 part olive oil

INGREDIENTS:
organic kumquats, organic cane sugar, organic apple cider vinegar, fresh lemongrass, organic kaffir lime leaves, sea salt.
